Persimmon Smoothie

img_2919Just a super quick smoothie recipe to take advantage of all the persimmons in grocery stores right now. Make it quick before they’re gone for the season!

I realize I like far less ice in my smoothies than most—I prefer frothy to frosty, I suppose. Go ahead and add as much ice as you normally prefer.

Persimmon Smoothie

You’ll need:

  • 1 persimmon, diced
  • 1/2 cup coconut water
  • 1/4 cup Greek yoghurt
  • 2 ice cubes (or more according to preference)
  • 1 tsp plant-based protein powder (optional)

Place all ingredients in a blender and pulse until smooth.

  1. What a great way to use persimmon. I’ve only ever eaten persimmon “as is”, never tried to use it as an ingredient.

This post would make a great addition to Our Growing Edge, a link up just for new food adventures. It’s a fun way to share your new food experiences and flavours with other foodies. This month’s theme is HEALTHY STARTS including breakfast ideas or new healthy food habits for the start of 2017.

More info including how to submit your link here: http://bunnyeatsdesign.com/our-growing-edge/
