Persimmon Smoothie

img_2919Just a super quick smoothie recipe to take advantage of all the persimmons in grocery stores right now. Make it quick before they’re gone for the season!

I realize I like far less ice in my smoothies than most—I prefer frothy to frosty, I suppose. Go ahead and add as much ice as you normally prefer.

Persimmon Smoothie

You’ll need:

  • 1 persimmon, diced
  • 1/2 cup coconut water
  • 1/4 cup Greek yoghurt
  • 2 ice cubes (or more according to preference)
  • 1 tsp plant-based protein powder (optional)

    Place all ingredients in a blender and pulse until smooth.


  1. What a great way to use persimmon. I’ve only ever eaten persimmon “as is”, never tried to use it as an ingredient.
