Quick Chamomile Lemonade

IMG_20180825_192254It’s amazing how quickly the mind can shift our moods and cravings. I’ve recently taken to grocery shopping at a nearby Longo’s (one of those beautiful grocery stores with high ceilings, exposed wood beams, a salad and pizza bar, and an in-house house wine store… I ❤ you, Longo’s Leaside). For some reason, there is *always* a table with reasonably-priced, freshly baked lemon meringue pie sitting by the produce. It’s always hard to walk past that pillowy meringue, but today was especially difficult. It ultimately felt wrong to reach for a slice while still in my gym clothes, so I continued onto the herbs and forgot about it… until I got home.

I was craving that pie for hours! Finally, I came up with a compromise that made use of my one lonely fridge lemon. Maybe I didn’t need pie after all; I was just longing for a lemon-flavoured something? As soon as I started thinking of a tea/lemonade hybrid, my cravings did a full 360 toward this refreshing drink. I hope you find it just as satisfying.

Quick Chamomile Lemonade

You’ll need:
  • 16 oz boiling water
  • heaping tbsp chamomile flowers
  • juice of one lemon
  • 1 tbsp agave nectar
  • 1 cup ice cubes

img_20180825_1923131.jpgSteep chamomile in boiling water for approximately five minutes. Combine lemon juice and agave nectar in a large jar. Close lid and shake to combine.

Add ice to the lemon mixture and pour tea over top. Close lid and refrigerate for 30 minutes. Enjoy with some seasonal fruit!
